The grapes are exclusively harvested at night to benefit from the low temperatures and to increase the quality. They are directly pressed to extract the preliminary aromas. Under the press, the first juices selection allows only the tete de cuvee to be kept. Fermentation occurs at a cool temperature to express the fruits and the aromas.
